• 1 1/3 cups all-purpose flour • 1 tsp baking soda • 1 tsp ground cinnamon • 1/2 tsp ground ginger• 1/2 tsp ground cloves • 2/3 cup plain nonfat yogurt • 1/3 cup honey • 1/4 cup canola vegetable oil • 1 egg, beaten • 1 cup fresh (or frozen/thawed)peaches, peeled and chopped • 1 tblsp all-purpose flour • cooking oil spray • 2 tsp powdered sugar . DIRECTIONS: Peel and chop peaches. Combine flour, soda, cinnamon, ginger, and cloves in a large mixing bowl and stir well. Combine yogurt, honey, oil and egg in a small bowl and stir until blended. Add yogurt mixture to dry ingredients and stir until smooth. Combine peaches and one tablespoon flour, gently coating peaches with flour. Fold peaches into batter and spoon batter into an 8 square pan that is coated with cooking spray. Bake at 350 for 25 minutes or until toothpick inserted comes out clean. Let cool slightly in pan then remove to a wire rack and cool completely. Lite Cool-whip for topping. Yields 12 servings. Per Serving: 144 Calories, 5g Fat (31.4% calories from fat), 3g Protein, 22g Carbohydrate, 1g Dietary Fiber, 16mg Cholesterol, 120mg Sodium
I doubled the recipe (except the ground cloves-- they were strong)and put it in a regular cake pan. Pineapple or blueberries mixed with the peaches would be good too.
Well I became a statistic this summer. Eating out too much has made me gain back some weight. The husband has spoiled me way too much and we've been eating out too much. I have done some things well this summer though. I have reconnected with cousins and other family members, spent time with friends, and made some trips that were enjoyable and relaxing. I have taken the time to smell the roses and see the sunrises. Now if I can just cut back on the sweets during all this happiness! :D
