Mix ketchup and sugar in a bowl and pour over cooked chestnuts. Then bake for one more hour. Makes about 55 (140 calories for 4) I have also made these in the microwave. They are the talk of the party and everyone will want the recipe!
Well I became a statistic this summer. Eating out too much has made me gain back some weight. The husband has spoiled me way too much and we've been eating out too much. I have done some things well this summer though. I have reconnected with cousins and other family members, spent time with friends, and made some trips that were enjoyable and relaxing. I have taken the time to smell the roses and see the sunrises. Now if I can just cut back on the sweets during all this happiness! :D

Santa Fe Breakfast Casserole
(Ingredients) * 2 tsp. canola or olive oil, *1 onion diced, 3 med. potatoes thinly sliced, 5 eggs, 7 egg whites, 2 cups small 1 or 2% cottage cheese curds, * 2 cups low-fat cheese shredded, * (2) 4oz. cans of chopped green chiles, drained (optional), 1/2 cup all-purpose unbleached flour, * 1 tsp. baking powder, 1/2 tsp salt (optional). DIRECTIONS: Preheat oven to 350. Spray 9X13 pan. Use nonstick frypan to fry oinons in oil. Add potatoes and brown. I a bowl whisk together eggs and egg whites. Add cottage cheese, cheese, chiles (I would trade the chiles for fresh spinach), and dry ingredients. Gently stir in cooked potatoes. Pour into baking dish. Bake 30 minutes. Calories- 235, Sat. fat3g, Sodium 730mg.
DAY NINETY SIX- Healthy Eating Journal
Today, I bought my first turkey burger. I tried to buy saffron. Again.... not in a small town. I made the chicken (see recipe below) from the OSU cookbook Whit sent me. I highly recommend it. I would add corn instead of olives and use spray instead of olive oil to reduce calories. Olive oil does contain healhty fats though. I was watching some show last night (okay as I was clicking through channels) and it was talking about how to identify the good and bad fats in your meat. The marbling is collagen type fat and is good fat. He said the elastic looking shiny stuff is bad for you. He also said that for stewing meat, the cheaper meat cuts with some of the good fat showing is the best to use. I learn something new every day.
I also learned a great deal from my students today. I have them do oral caricatures for speech and they study the life of a famous person, dress as that person, tell us about themselves, then give a short speech actually given by that person. They did a great job and I learned info I never knew about some famous people. I also love the little Nike basketball my players from this year surprised me with yesterday out of the blue with their notes and some-day famous signatures. Thank you girls. I love it and you.

DINNER: Chicken dinner (see recipe in blog) 300 calories w/out the olives, safron, and less oil. 1/2 cup fresh sliced strawberries (23 calories) no sugar added
Homemade chocolate cake (I left the recipe on the menu at the bottom) 250 calories
Total calories today with Lays stacks and chocolate cake included= 1100-1200
I can have my cake and eat it too! :D I just have to be smart about what I eat, when I eat it, and how I cook it. Oh.... and faithfully do my crunches and squats each night.

MEDITERRANEAN CHICKEN- 330 CALORIES
(Ingredients) 2lbs. boneless, skinless chicken breast cut into 3-4 pcs. *1/2 cup finely chopped cilantro, 1/2 cup finely chopped parsley, *2 tblsp. minced garlic, *1 tblsp. crushed ginger, *1 tblsp. lemon pepper, *1/4 tsp. saffron threads (opt.), * 1 lemon quartered, *2 med. onions sliced thin, 1lb. red or white potatoes cut into thin wedges and sprinkled w/paprika, 1/2 cup olive oil, 1/2 cup water, *1 cup olives cut in half. DIRECTIONS: In roasting dish, mix herbs and lemon. Crumble saffron into the herbs. Coat chicken with the herb mixture then top w/onions and potatoes. Pour olive oil ov er the top. Add the water. Cover and bake in 350 oven for 45-60 minutes. 330 calories, 2g sat. fat, 390mg sodium. Reduce calories by spraying chicken instead of adding oil and skip the olives. I'd add corn instead. It was VERY GOOD.

DAY NINETY FIVE- Healthy Eating Journal
Still recovering from holiday eating and food. Ever notice how your stomach doesn't like it when you "mix" too many types of foods in one day. Pretty sure I gained a couple pounds this weekend. Heavy stomach. No worries though. I just need to stick to good food choices this week. Thanks to Whit G. and the OSU cookbook she mailed me-- that's going to be a lot easier. Thank you so much Whit!
Today I started the day with a much needed serving of Activa Yogurt for breakfast. I finished off my box of wheatables today (16 for my mid-morning snack-140 calories) and had my 200 calorie healthy choice soup for lunch. I didn't eat all of it-- left the broth because I'm feeling so bloated. After school I had some pears and headed to town to pick up material for costumes for the play. Took a couple of hours and my stomach was growling so broke down and bought some Lays plain stack chips. Remember the Lays stacks are healthier than the Pringles. Had 200 calories worth between stores and driving. Made it back for late supper and made the shrimp alfredo pasta dish I posted, but you have to use fresh spinach and mushrooms for the best results. I also like thin noodles. Not a fan of thick noodles for anything except goulash. Now there's something I haven't made for a while. I think I'm going to try some turkey burger too. Tonight... just the pasta dish (320 calories) and a piece of whole grain toast w/butter spray (110 calories). Total calories about 1100 today but feel bloated nevertheless.
Speaking of that... had a conversation with a blog follower today about the whole cabbage thing. I think it's safe to say that the only reason those extreme-- go all week eating cabbage-- diets work, is because you spend a lot of time in the bathroom or wishing you were!! I only did it two days in a row and I couldn't take it any more. I want to find food habits that are natural and normal. That is not my idea of happy times eating!
Try out some of the great recipes for the OSU cookbook this week and I know some of you are attending or attended other colleges, so please feel free to send some from yours as well.

DAY NINETY THREE and NINETY FOUR- Healthy Eating Journal
This will be short because I am up in the mountains at my in-laws. There is still snow everywhere, but the roads were clear so it's beautiful up here. They have a lodge and motel with a game room and we all stayed there (our children and their families and my husband's siblings and some of their kids as well) so it was fun to play games all night. They have shuffleboard and we had tables set up of card games and of course lots of food. On the drive up we stopped at Jack in the Box and I had to make a healthy choice I ate the grilled chicken pita (310 calories, 650mg sodium, 3g sat. fat-- hold the chipolte sauce so the sodium's probably lower than what I listed-- and my bad choice was we shared part of an order of bacon cheese potato wedges. We didn't eat the whole order because we were sure it had to be loaded but even a few were yummy. We ate 2/3 of the order, so 560 calories divided by 2 is 280 calories each. Sharing an order of anything saves calories!!! Still we're talking a 600 calorie lunch! :D On the road again... (think Willy Nelson) By the way, breakfast was a scrambled egg and 1 piece of whole wheat toast w/butter spray (200 breakfast total calories). Supper was BBQ in the snow. :D I only had 1/2 a hamburger patty (no bun) 160 calories, a pickle and 1/2 cup of Trish's awesome potato salad (180 calories).
The kids loved running out on the deck at the cabin by the river. The view here is amazing as always. Being with family is always a blessing. The Easter bunny had to dig in the snow to hide all the eggs in the meadow. It's an annual event up here. They also have church in the Wildwood. People show up in their jeans and they all file into the little church. We also get cable up here so we can watch our church programs as a family. Leanda (my husband's sister) and I spanked everyone in Pinochle last night. I don't know who won at the hand and foot table or the shuffleboard table, but I know we won at ours. :D Grandma Trish played snap with the grandkids and that was fun to watch too. It was great to see everyone again. And of course Trish made her mouthwatering bacon waterchestnut wraps for snack foods. We also had the spinach dip w/bread, and popcorn, etc. I had four the of the waterchestnut wraps (140 calories), some Fresca (0 calories) and some of my low cal popcorn. I will post the recipe for Trish's waterchestunt wraps and I promise they will become one of your favorite party snacks!
At 7am this morning I could hear little feet running up and down the hallway then there was a knock at our door. The grandkids wanted to know if the Easter bunny had came to our room too. They were shocked that he had forgotten us! (something to remember) but relieved when we headed up to Grandpa Alan and Grandma Trish's house/cabin and saw that he had left a large basket there as well. I guess Grandpa and I were the only bad ones. I made breakfast for all with the help of my sweetie and Leanda. Leanda cut up all the fresh strawberries, pineapple, and bananas. My husband fried up the chorizos (real Basque ones from Pauls-- not the fake ones), and I made french toast and scrambled eggs. Yes, I exposed everyone to scrambled eggs w/spinach and low-fat mozzerella cheese. Taco shells gave everyone the choice of making a buritto if they didn't want french toast. I figured since Trish is making Easter dinner she should get a break for breakfast. I had some fruit, some eggs, and french toast. Trish had some Michele's Butter Pecan Syrup 220 for 1/4 cup (I used 2 tbsp-- so 110) and that was some of the best syrup I've tasted.
The Egg hunt out in the meadow was cold but beautiful and fun for the kids. We had an "in" with one of the dress-up chickens and he helped the grandkids out. Then we had our big Easter dinner of ham potatoes and gravy, green beans, and rolls. I didn't eat any rolls, but I'm sure they were as great as the rest of our dinner. Thank you Trish! Thanks to all the family who made it a wonderful Easter. Our spiritual health goes hand in hand with our physical health. Of this I am certain. I look forward to more mountain views and family memories this day. I thank the Lord for all my blessings.

DAY NINETY TWO- Healthy Eating Journal
I'm doing this a little early today because I have drama practice tonight for the spring play and my husband's coming home and we're leaving in the morning for the mountains. So I tried some new food combinations today (and liked them), but I just have to say that too much of some foods can have some "side effects" that you may want to consider. I'm not saying avoid those foods-- probably just don't want to eat them two days in a row. I don't know if it's proper to say this on a blog or not... but cabbage smells bad when you're cooking it and it causes some gas. Sorry... had to say it. That gas is wretched smelling. I had to look to see if someone else had caused it because I was pretty sure something that horrid had not came out of me. I hope that doesn't offend anyone who stumbles across my blog but people should be warned.
So my interesting combinations today were the following: wheatables w/tuna and baked potato w/left-over homemade spahetti sauce and low-fat cheese. Now I'm sure people have tried both of this many times, but they were firsts for me. The tuna is best using the pouch (starkist light is what I used). However, I would recommend taking a little container or paper plate to dump it on because the best part of the pouch is not having to use a can opener and drain the water off. This always makes my hands stink even after washing them. If you don't take a container to dump the tuna in from the pouch, you end up reaching in with your fork and eventually your fingers get tuna on them. Don't add mayo or anything- -you really don't need it. The wheatables (or whatever cracker you use) has plenty of flavor. I really liked it and it was filling.
Here was my day of eating and I have added the popcorn I will eat tonight as I watch a movie w/my hubby. :D

celery and carrot sticks (2 calories, .2 sat fat, 3mg sodium, 16 calories, 4g sat. fat, 32mg sodium)
fresh pineapple chunks (1/2 cup) 41 calories, .1g sat fat, 1mg sodium
SNACK: Quaker Granola Bar- 100 calories, 1.5 grams Sat. fat, 75mg Sodium
DINNER:
Baked Potato (no skin)- (57 calories, .1g sat. fat, 149mg sodium)
w/left-over spaghetti sauce (120 calories)

DAY NINETY ONE- Healthier Eating Journal
Busy, busy day. One of those days you just run from one thing to the next. I ate more calories than I have been (but I'm not going to melt down over it this time) because I knew I was very active today physically. I don't like going over 1500. I didn't watch my sodium as closely as I should have though and went a little over-- not much, but I noticed it's a lot easier to rack up the sodium in prepackaged foods. The cabbage stew was great and holy cow! majorly low in calories. It was kind of cold today, so I was craving hot chocolate (as you can tell by the fact I had it in the morning and at night). I got my chocolate fix without the saturated fat, but it did cost me some sodium. Still... that's better than all the saturated fat in candy bars. I also noticed on my hot chocolate packet that it said to get the water hot, but NOT boiling. That agrees with everyone I've read about the whole 70 degrees and too hot being bad for you. Anyway, I thought that was interesting.
It took me four hours after supper to sort and clean out just one of my drama closests at school and I would have been there all night if my son hadn't came over to help me out. He's OCD like me about getting things organized so it was a huge treat and big help to have him there with me. Thank you Anne for letting him come! :D I figured I burned off my hot chocolate calories during that four hour time period of being on my feet, lifting, bending, etc. Of course Jason burned even more because he did the heavier lifting and hauled out all the stuff I threw out when we were done. I did find some things I can use in the play though and even found a tub of my personal Halloween stuff that I thought had been lost. Jason was particularly happy about that since he is now in charge of the big Halloween family garage project in October and he had purchased some of the items in the lost family tub! :D
So here was my eating day:

It took me four hours after supper to sort and clean out just one of my drama closests at school and I would have been there all night if my son hadn't came over to help me out. He's OCD like me about getting things organized so it was a huge treat and big help to have him there with me. Thank you Anne for letting him come! :D I figured I burned off my hot chocolate calories during that four hour time period of being on my feet, lifting, bending, etc. Of course Jason burned even more because he did the heavier lifting and hauled out all the stuff I threw out when we were done. I did find some things I can use in the play though and even found a tub of my personal Halloween stuff that I thought had been lost. Jason was particularly happy about that since he is now in charge of the big Halloween family garage project in October and he had purchased some of the items in the lost family tub! :D
